Scharfmacher

Spyderco Z-Cut™ Kitchen Knife with a 4.3" Pointed Tip delivers precision, control, and smarter cutting through an innovative offset design. Built around a PlainEdge CTS BD1N stainless steel blade, this knife is engineered for detail work on any cutting board. What sets the Z-Cut apart is its elevated handle geometry. Rather than aligning with the blade, the handle sits above it, creating generous clearance as you work. That extra space reduces knuckle contact and fatigue during extended prep sessions, making intricate cuts feel natural and effortless. The 4.3" pointed tip combines the advantages of an offset blade with an acute point, giving you unparalleled accuracy for tasks that demand finesse—scoring, trimming, coring, and initiating delicate cuts in fruit, vegetables, or herb bundles. The result is cleaner, more precise results with less effort. Key features at a glance
: 4.3" Pointed Tip for precise incisions and controlled detail work
steel: PlainEdge CTS BD1N stainless steel blade for reliable, clean cuts
handle: Injection-molded polypropylene handle designed to stay secure in your grip
design: Elevated (offset) handle to maximize clearance on the cutting board
color options: Red, green, or black handles to suit your kitchen setup
Ideal use scenarios
Fine trimming and detail work on small vegetables and herbs Precise scoring and coring for fruit prep or garnishes Delicate chopping tasks where knuckle clearance matters, such as dicing garlic or shallots Garnish preparation and meticulous slicing that demands an accurate, controlled edge
Who benefits most from the Z-Cut Pointed Tip
Home cooks with busy countertops, tight prep spaces, or a daily need for clean, precise cuts will appreciate the combination of off-set geometry and a pointed tip. It’s especially well-suited for cooks who value control, comfort, and the ability to tackle small, detailed tasks without repositioning their hand. With the Spyderco Z-Cut, you’re choosing a kitchen knife that prioritizes practical performance and everyday versatility—where an elevated handle and a precise point translate into faster prep, less effort, and better results.
The Spyderco Z-Cut redefines the offset kitchen knife with a modern, ergonomic design built for serious food prep. Its Z-shaped profile positions the handle above the blade, giving you more knuckle clearance and control on the cutting board. The 4.3" CTS BD1N stainless steel blade delivers exceptional edge retention and corrosion resistance, while the blunt tip adds a layer of safety inspired by traditional bread knives.
4.3" CTS BD1N stainless steel blade — superior edge retention and corrosion resistance
SpyderEdge serrated edge — ideal for bread, tomatoes, and fibrous foods
Blunt tip design for enhanced safety
Offset Z-profile handle — more knuckle clearance, less fatigue
Durable black polypropylene handle
Lightweight and versatile for everyday kitchen tasks
Note: Also available in red, yellow, and green handles, and in PlainEdge configuration.
Reasons we offer smaller knives are numerous but essentially people's hands come in different sizes and we occasionally find ourselves in social situations that dictate use of a smaller blade. Many think smaller versions of the same model are simply shrunk down. Not so. For every design to reach its utmost level of ergonomic comfort and maximum performance we often take features and engineer/rework them into a more diminutive pattern. An example is our 79mm version of the Rescue Model.
A smaller equivalent of the C14 93mm Rescue, it too has a flat saber-ground, SpyderEdge, VG-10 blade that ends in a sheepfoot safety tip. For smoother thumb rotation we enlarged the Spyderco Trademark Round Hole, which in turn creates a prominent hump to position the thumb on while cutting. The FRN waffle textured handle is available in indigo blue, black and safety orange with an ambidextrous, tip-up pocket clip.

When Spyderco introduced the first Sprint Run™ Shaman® combining the traditional look of brown canvas Micarta scales and CPM CRU-WEAR blade steel, we were overwhelmed by the response. Later dubbed “CruCarta,” this distinctive pairing of old-school, high-performance materials became an instant classic. To ensure we could meet customer demand when we applied the “CruCarta” treatment to other models, we decided to make them full-line products, not limited editions. We began with the Para Military 2 and are now proud to add four more USA-made models to this elite family. All feature skeletonized full stainless steel liners, slim brown canvas Micarta scales, and CPM CRU-WEAR tool steel blades that offer an outstanding balance of edge retention and toughness. The scales of all these knives are sanded smooth but left unpolished, so they will naturally patina with age and handling to develop their own unique character.

The Gauntlet is a simple, easy-to-use sharpening system that enables even novice users to achieve razor-sharp edges in just a few minutes without electricity, oil, water, or complicated clamps or fixtures. Its injection-molded, high-impact-plastic base has an integral handguard and specially designed holes that hold abrasive rods at the perfect 40-degree angle (20 degrees per side) to create keen, long-wearing edges.
The star-shaped holes allow the rods to be turned to expose fresh abrasive surfaces or to orient the edges of the rods for sharpening serrated edges. Ideal for most sharpening needs, the Gauntlet Select includes a pair of fine ceramic rods. For very dull knives or to reprofile badly worn edges, CBN rods are also available separately.
The Tri-Angle™ Stone Ultra Fine is a precision sharpening accessory for the Tri-Angle Sharpmaker base. It creates an exceptionally fine scratch pattern to help you achieve hair-popping sharpness on your blades.
Ultra-fine grit: Delivers a refined finish that enhances edge smoothness and micro-surface precision.
Compatibility: Fits the Tri-Angle Sharpmaker base for stable, controlled finishing strokes.
Size: 7" × 0.5" (178 mm × 13 mm); slim profile to work with standard sharpening setups.
Dry-use design: Intended to be used dry, enabling clean, consistent results.
Cleaning and maintenance: Easy to clean with household cleanser, a scouring pad, and water.
Origin: Made in the USA, reflecting quality craftsmanship and reliable sourcing.
Packaging: Sold individually.
With the Ultra Fine stone, you refine edges after coarser grits to reduce micro-serrations and achieve a smoother, more precise cut. It’s ideal for kitchen knives, pocket knives, and precision tools used in cooking, carving, or fieldwork. The dry-use design and straightforward maintenance make it a practical upgrade for ongoing blade care, helping you maintain sharpness with less mess and downtime. Using it in conjunction with the Tri-Angle Sharpmaker base provides stable, repeatable results, ensuring your edge remains consistent across uses.
The Spyderco Para Military 2 Camouflage Black Blade G-10 has several changes over the classic version. The G-10 handle is narrowed at the end improving the ergonomics. It features a Compression Lock® and an ambidextrous-friendly four way clip which carries tip-up/tip-down, left/right-hand and rests deeper in a pocket.
We kept the same high-performance CPM S45VN full flat-ground blade but made its profile thinner; removing angles that could catch on a pocket or clothing during deployment. We also lengthened the blade's tip and added additional surface jimping to both the spine and finger choil. Implementation of a new Bushing Pivot System generates fluid action and more consistent manufacturing tolerances.
Refinements to overall construction may not be drastic or even visible to the eye but from the G-10 textured handle to the CPM S45VN steel full flat blade, everything is sharper, smoother and guaranteed to provide performance and user comfort.

Undeniably one of Spyderco’s most popular and in-demand designs, the Para Military 2 distills the world-class performance of our legendary Military Model into a more compact, pocket-friendly package. Not content with that feat, it then added the extreme strength, reliability, and ease of use of our Compression Lock mechanism and the versatility of a four-position pocket clip.
The resulting synergy is far greater than the sum of its parts and, to many end users, represents the ultimate folding knife design. To push the performance envelope even further, this model features CPM S45VN blade steel and textured camouflage pattern G-10 scales.

One of the tradeoffs of compact knives is that they are somewhat more challenging to deploy one handed. The Dragonfly 2 Emerson Opener solves that problem by enhancing the popular Dragonfly 2 Lightweight with an Emerson Opener -- an integral hook that snags the top of the pocket to automatically open the blade as the knife is drawn.
Sporting a distinctive gray FRN handle with non-slip Bi-Directional Texturing™, this high-speed version of the Dragonfly 2 proudly includes all the other defining features of this popular model.

It seems like small knives get respect equivalent to their size, very little. Most people wouldn't look at a subcompact lightweight car and think "high-performance vehicle". That first estimation could change when it's revealed that clown car is disproportionately packing 350 horsepower and a high-speed racing package.
Another example of stature not accurately representing ability is a Spyderco Dragonfly. Its cutting ability is unequal to its diminutive package and innocuous name. It kicks off with premium components like VG-10 blade steel and a G-10 foliage green handle. The VG-10 is tooled into a full flat-grind 2-1/4" long blade with a spine cusp jutting out the top where the thumb naturally settles itself for control over the cutting edge. The G-10 handle is ergonomically blueprinted so when held and used the knife feels and performs like a larger tool. Even the positioning of the Spyderco Round Opening Hole in relation to the pivot is tweaked for smooth opening and hitting all the correct pressure points in the hand. Blade and handle geometry create a series of grip angles with a purposeful flat shelf at the base where the pinkie finger rides as a leverage point.
Wire clip carries right or left-handed tip-up or use it as a money clip.

The Dragonfly has always represented an extraordinary blend of compact size and full-service cutting performance. Now that performance takes another quantum leap forward with the addition of a Wharncliffe blade profile. The blade of choice of many savvy knife users, the Wharncliffe’s perfectly straight cutting edge offers extreme cutting power near the heel and scalpel-like precision at the tip—especially when combined with a low-friction, full-flat grind.
All other features of this knife are consistent with the best-selling Dragonfly 2, including a lightweight, injection molded FRN handle, high-traction Bi-Directional Texturing™, a sturdy back lock mechanism, and a reversible deep-pocket wire clip.
